Wasabi Martini

Adding wasabi to vodka creates a foamy green cocktail. In contrast to most drinks which get more watery over time, here the initial taste is mild, but after several minutes the heat and flavor intensify. Some wasabi powder will settle out into the bottom of the glass: it can be stirred back into the liquid with the stem of the leaf (or a swizzle stick), or eaten.

Ingredients

  • 3 ounces vodka
  • 1 teaspoon wasabi powder
  • 1 small fresh Wasabia japonica leaf with stem or celery leaves
  • Alternate garnishes: lemon peel curl or a strip of nori draped over the glass

Directions

  • Combine vodka and wasabi powder in a shaker. Swirl to ensure that all wasabi powder is wet. Add crushed ice and shake vigorously.
  • Strain into a chilled martini glass. Garnish with wasabi leaf or celery leaves.

Yield: 1 serving

Note: We have seen a sweet versions called “Wasabi Martini” at bars and restaurants. Examples include Stoli vanilla, sake, and wasabi; and vodka, fresh lime juice, simple syrup and wasabi. These recipes use wasabi for a kick—and there’s nothing wrong with that—but true wasabi lovers will appreciate the simple pairing of wasabi and vodka, above.

Wasabi Bloody Mary

Ingredients

  • 2 oz vodka
  • 10 oz tomato juice
  • 2 dashes of Worcestershire Sauce
  • A pinch of freshly ground black pepper
  • Pinch of wasabi powder
  • One tablespoon dry sherry (preferably Fino)
  • One teaspoon lemon juice

Directions

Mix all the ingredients in a jug or cocktail shaker. Chill for an hour (or used chilled tomato juice to prepare) and then thoroughly mix before serving. Pour into highball glasses. Some people prefer ice in their Bloody Mary but a well chilled cocktail should need no additional ice. You may prefer to add additional Worcestershire Sauce and I always serve a Bloody Mary with a bottle of the famous sauce for guests to adjust the seasoning to their own taste.

Serves two.
